Closing out the week before the Super Bowl with another perfect game day snack! I mentioned earlier this week (like every day ha), but the Super Bowl is one of my favorite “holidays”. I mean I don’t really think it’s a holiday per say, but it should be. I enjoy watching football and since my Eagles are in it this year, it makes it even more exciting.

Besides the fact that I like football, I love all the food that comes along with watching it. Chicken wings, chips/veggies and dips, chili, and anything on the grill. I could probably live off appetizers and finger food and be one happy camper. Also, it doesn’t hurt that football is usually associated with some alcohol. A few drinks and delicious food is my kind of party.

I’m a sucker for a good burger and fries. I love all the toppings and combinations you can get with burgers, but sometimes nothing hits the spot like a good old-fashioned one. I’m talking about a simple beef burger patty, lettuce, tomato, onion, pickles, and obviously a sauce. Today we are keeping it super classic with Sir Kensington’s special sauce.

If you have had In-N-Out, an Austin favorite P. Terry’s, or maybe just a burger at a local restaurant, you know what special sauce is. It’s pretty much the sauce of all sauces for burgers and it’s amazing! But most of time it’s full with a bunch of crap – sugar, preservatives, and artificial flavors or colors. That’s why I was so happy to find out Sir Kensington’s was whipping some up. Their’s is made from real ingredients that I can pronounce and is gluten free and soy free. And I love their mission to bring charm back to classic sauces. Because y’all know I’m a sucker for a good sauce.

I gave these burger sliders a fun twist by putting them on sweet potato buns – they make a great substitute for bread while packing in a few extra nutrients. Finishing them off, I topped with with the classic burger toppings plus a healthy dollop of special sauce. These guys make the ultimate game day snack, appetizer, or just a fun weeknight dinner. Bonus is they are less than 10 ingredients to make!

Classic Burger Sliders on Sweet Potato Buns

ingredients

  • 1 pound grass fed ground beef (I used 85% lean)
  • 1/2 tablespoon yellow mustard
  • 1-2 small white sweet potatoes, cut into 1/2 inch rounds (about 400 grams for 2)*
  • 1 cup shredded lettuce (60 grams)
  • 8 slices red onion
  • 2 roma tomatoes, sliced (128 grams)
  • 4 tablespoons Sir Kensington's Special Sauce
  • 8 pickle slices
  • 1 teaspoon avocado oil
  • salt and pepper, to taste

instructions

  • Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper. Spread out sweet potatoes on baking sheet and spray with avocado oil, covering both sides. Bake for 35-40 minutes, flipping halfway through, until cooked through and golden brown.
  • When sweet potatoes have about 8 minutes left, make the beef. In a medium size bowl, mix together ground beef, mustard, and salt and pepper. Form into 8 2-ounce patties. Heat a large skillet over medium heat. One hot, add burger sliders and cook for 2-3 minutes, flip, and cook for another 1-2 minutes. Remove and set aside.
  • Once potatoes are done, build the sliders. Take one sweet potato round and top with shredded lettuce, red onion slice, tomato slice, beef slider, 1/2 tablespoon special sauce, and a pickle slice. Leave as is or top with another sweet potato round.
  • Enjoy!

*depending if you want to top your burgers with top 'bun' or leave them open face, use 1-2 sweet potatoes. One if you just want a bottom bun and 2 if you want a top and bottom bun.
