Customizable Apple Bun Sandwiches

If you haven’t been hiding under a rock then you might have seen the idea of sweet potato toast. It is all the rage right now. I have 100% participated. I already top sweet potatoes with everything I can thing of and they are one of my favorite foods, so why not make it look like toast so you can add more toppings. It’s the best of both worlds.

Customizable Apple Bun Sandwiches

That is where the idea of these apple bun sandwiches came from. If you can make sweet potatoes into a bread like substitute, why not apples? With apples being in season right now, they are amazing and most importantly, huge! If you looks around the grocery store they are probably 2x their normal size since they are in their peak. Which makes them a perfect substitute for bread. All you need to do is cut them horizontally in about 1/2-1 inch thickness. They are sturdy enough to hold just about anything. And the bigger/wider the apple, the more you can stuff in it.

Customizable Apple Bun Sandwiches

This recipe is really customizable. You can fill your apple buns with any of your favorite sandwich ingredients. Some ideas that I made are

  • turkey, avocado/guacamole, and sliced cucumbers
  • hummus, sliced cucumbers, carrot ribbons, red onion, and sliced jalapeño
  • avocado chickpea mash, sliced cucumber, carrot ribbons, and red onion

The only piece of equipment you really need for this recipe is an apple corer. My mom got me that exact one a few years ago when I kept borrowing hers. It makes life so much easier when you have recipes that call for a lot of apples.

ingredients

For the Bun:

  • 1-2 large apples, cored

Suggested Fillings:

  • sliced turkey breast
  • hummus
  • chickpeas with smashed avocado
  • sliced cucumbers
  • red onion
  • carrot ribbons
  • jalapeño
  • avocado/guacamole

instructions

  • Cut apples horizontally into 1/2-1 inch slices.
  • Assemble the sandwiches by placing one apple bun on the bottom, add fillings of choice, and then top with another apple bun.
  • Get creative and use any combination of sandwich ingredients you like!
