In our house, pizza never gets old. Well let me be more specific – for Michael, pizza never gets old. I think he could eat it practically every day and not get sick of it. And even though his metabolism still works like a teenager [eye roll], we all know eating pizza every day isn’t the best option.

To keep him happy, I try to take those flavors and turn them into some fun and different meals (these sweet potatoes ones are one of my favs and these egg cups make a fun breakfast). So that’s where these supreme pizza meatballs came from. They have all the toppings you would find in your typical supreme pizza, rolled into meatball form.

The thing I love about these the most is they are packed with some extra veggies. Michael struggles to get in veggies on most days so I am always trying to sneak them in when I can. One of the easiest ways to do this is the The Blend. All you have to do is add chopped/ground mushrooms to ground meat in your favorite meal to enhance the flavor and texture of the meal. Mushrooms have a meaty consistency and add a richness to meals, while also adding nutrients like protein, fiber, vitamins B & D, and iron. And they taste delicious!

I served these meatballs over zucchini noodles with some more pizza sauce to keep them low carb, but the sky is the limit. I’m thinking sweet potatoes noodles would be a solid choice or if you want to get really crazy and aren’t on the Whole30, serve these up in a nice crusty roll toasted in the oven with some sauce and melted cheese. Dang that just got my mouth watering haha.

They make great for meal prep too. I made them a few times testing the recipe and Michael ate them throughout the week with some different starches and veggies.

Paleo Supreme Pizza Meatballs

ingredients

  • 1 pound ground sausage
  • 1/3 cup diced red onion (35 grams)
  • 1/2 cup diced green pepper (60 grams)
  • 1 cup diced mushrooms (3 large/80 grams)
  • 1/4 cup black olives, diced
  • 1/4 cup pizza sauce
  • 1/2 tablespoon avocado oil
  • 1 tablespoon nutritional yeast
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon red pepper flakes
  • salt and pepper, to taste
  • optional for serving: zucchini noodles, pizza sauce, fresh herbs, red pepper flakes...

instructions

  • Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Set aside.
  • In a medim sauté pan over medium heat, add avocado oil and let it get hot, about 30 seconds. Add onion and sauté for 2-3 minutes, stirring occasionally, until soft. Add pepper and sauté for another 1-2 minutes. Add mushrooms and sauté for another minute until softened.
  • In a medium sized bowl, add sausage and veggie mixture. Add olives, pizza sauce, and spices and mix until combined. Using a tablespoon as a scoop, form into 1-1½ inch-sized balls (makes about 24 meatballs). Add to parchment lined baking sheet and bake for 20 minutes until cooked through.
  • Serve however you please - I served them over zucchini noodles with more pizza sauce and fresh parsley. Enjoy!
