You guys know I am a huge fan of the collard green wraps. I love adding in more veggies to my diet in fun ways and I love how versatile the wraps are. I’ve talked about it before, but you can really stuff them with anything you have on hand and it will work. Trust me, I’ve tried. I’m all about the fun flavor combos and collard wraps make the best excuse to try some new combos out. Or if you just have some weird leftovers in the fridge, it works too.

With 4th of July happening this weekend and all the BBQs, pool parties, and fun activities, I wanted to bring you guys a fun way to still eat healthy. I know we can get a little carried away with indulging in some good old backyard BBQ food (hello beer, chips, pasta salad, hot dogs…), so I thought it would be nice to have a healthy option too. Enter the party sized chicken collard wraps. They are like little sushi chicken collard wraps! Packed with lean protein, veggies, and fruit.

And if you didn’t notice, they kind of have the red, white, and blue color scheme going on! Well the red cabbage is kind of purple, but it’s close enough. If you know a food that is truly blue let me know. I kept the wrap pretty simple with only 5 ingredients. It’s a little sweet from the apple and red pepper and then savory with the chicken. The sauce is where it’s at though! You guys know I’m all about a good sauce. The peanut butter pairs so well with the apple and chicken and enhances all the flavors.

If you plan on making these for a party, feel free to make in them in advance. The wraps still stay nice and crisp and won’t get soggy. We had a bunch at our house leftover from me making and photographing these and they lasted for a little over a week! Just make sure they are secure with toothpicks so they don’t unravel and keep the sauce separate and you are good to go!

  1. Ok, that is so cool that you did the red, white, and blue combo. I LOVE how you used collared greens (it’s amazing that God so masterfully and wonderfully created those vegetables to double as good ‘wraps’/green tortillas. And that peanut sauce sounds delish.

    1. I thought it was a fun idea too. And completely agree, collard leaves as wraps, sweet potato as toast, cauliflower as rice…so many endless possibilities with everything!
