Happy Friday! Or Fri-yay should I say. I have today off and plan to get a crap ton of stuff done. This is always the plan, but it usually doesn’t go that way. I got my list though and am prepared to check things off like crazy. It is day 3 of my Whole30 and I am feeling good. No snacking so far…well except when I was making my lunch on Wednesday night I had a bite of chicken and sautéed plantains. Does that count? It was only 2 bites. It just looked really good. Ugh that was my first day. My will power is lacking.

I had planned to make this strawberry cashew milk before I started the Whole30. Once I started the Whole30 I was like can I drink this? But I am pretty sure it is not considered SWYPO. Unless you absolutely love strawberry milk and drink a half gallon of it a night, this is totally a go. I wouldn’t make it an everyday occurrence either.

I used cashews instead of almonds since it makes a more creamy consistency. Once you soak them they are super easy to blend as well. And there is no need for straining like homemade almond milk since the cashews get completely dissolved.

Cashews are also packed with vitamins and minerals. About half of the fat packed in cashews is heart-healthy monounsaturated fat. This is the fat found in the Mediterranean diet and has been associated with lower levels of heart disease and cancer, and longer life-spans. So eating nuts can make me life longer? Sign me up! They are also rich in magnesium, calcium, phosphorus, potassium, copper, and selenium.

I have been having a glass of this in the morning with some eggs, veggies, and avocado. Even better is if you mix it with some chia seeds and let it sit overnight. Hint: I had that yesterday and that recipe will be coming soon!

ingredients

  • 1 cup soaked cashews*
  • 4 cups water
  • 2 cups diced strawberries
  • pinch of salt

instructions

  • Add all ingredients to a high powered blender and blend until thoroughly combined, about 30 seconds.
  • Store in the fridge in a sealed jar for up to one week. Shake well before use. Enjoy just as you would any milk product!

*soak cashews for least 30 minutes or overnight. If you have a high powered blender, this step is not needed.

  1. I had no idea cashews dissolved into the milk. I’ve made homemade almond milk and loved it, but it was an intense process for me. I can’t wait to try this!

    This sounds so yum! I’m def going to try. I’ve always wanted to make my own cashew milk but have always been a bit worried about how it would turn out!

    1. You should definitely try it Megan! I find it so much easier than almond since cashews are a lot softer. No need for straining and what not. Let me know how it goes!
