What I Ate Wednesday

Good morning and happy mid week! Anyone else ready for the weekend? I know I am. This post is brought to you by Monday eats. Gotta have some delicious eats to brighten up Monday. The day started off with a green smoothie bowl. Smoothie bowls are probably my new favorite thing. This one had a base of a little frozen sweet potato, frozen spinach, a few frozen berries, avocado, protein powder, wheat grass powder, ice, cashew milk, and a little local honey. I topped it off with some banana, chia seeds, flax seeds, and coconut flakes. Eating out of the bowl makes smoothies x100 better.

Pre-CrossFit snack was the rest of the banana from breakfast. Definetely didn’t help me. That WOD sucked.

After I got home from CrossFit I made a bomb ass salad. This one consisted of spinach, cucumber, beets, leftover shrimp, carrots, leftover roasted cauliflower, hummus, and some leftover homemade tomatillo salsa. I also had a side of greek yogurt for some added protein.

Dinner was typical protein and veg. Tuna steak with some green beans, zucchini, and red potato all sauteed with an Asian type sauce I made. I wanted quinoa, but the boyfriend didn’t seem too thrilled with that, so we settled for red potatoes.

AND the best part, dessert!! I tried to keep the whole day healthy since I knew we were getting ice cream. We went to a vegan ice cream place called Sweet Ritual. They were celebrating their 3.5 birthday, so all sizes were $3.50. I got a medium with a scoop of s’mores and cinnamon monkey something…it was a banana and peanut butter base with cinnamon. BOMB. Definitely couldn’t tell it was vegan ice cream. I will be returning.
