What I Ate Wednesday

I feel like I did a lot of eating today. For some reason I just wanted to eat all the things. That is like most days actually, but today more than normal.

Breakfast was an egg in a hole, a scramble of egg whites, spinach, and mushrooms, and then some avocado on the side. I didn’t know an egg in a hole was actually a thing until I saw one of my friends do it in college. This is probably maybe the second time I have ever made it, but felt like it this morning so I went with it.

Pre CrossFit snack was these protein sweet potato berry muffins I made the other day. I should be getting around to posting them soon. Super easy to make and healthy to boot.

Lunch was leftover vegan soup that I posted on the blog earlier this week. Except I made a quesadilla from grassfed cheese on an all natural corn tortilla with it, so it was no longer a vegan lunch. But boy that quesdilla was good.

This snack probably sounds strange, as my boyfriend would put most of the foods I eat in that category, but it turned out pretty good. I definitely need to play around with it though to make it a blog worthy post. It was a combo of carrots, cottage cheese, little bit of almond milk, sunflower seed butter, and chia seeds to make a pudding. I made it last night and let it sit overnight so the chia seeds would expand and do their thing. I also totally forgot to take a picture of it and realized it as I was typing this at 8pm. Being the fat kid/foodie that I am, I had sent a snapchat of it to my sister earlier in the day. I checked and she hadn’t opened it yet, so I texted her right away to take a screenshot of it when she did. I gotta get my sh*t together if I’m gonna keep up with these posts. Dinner was a delicious stir fry of chicken, broccoli, carrots, and red bell peppers. Topped with a tahini sauce that I’m obsessed with. I need to post it soon. I was so full, but I just couldn’t stop eating the veggies with the sauce. My favorite brand of tahini is Soom – if you are looking to try it, use this link to save 10%. I also snacked on this pita bread that the bf slightly overcooked in the oven and some rice he made to have along with his stir fry.

I was still kind of full, but wanted a treat so I mixed a little avocado, ice, and chocolate protein together. And I might have added some grassfed salted caramel ice cream from Lick in there. It’s made right here in Austin with local and all natural ingredients. The boyfriend went down to the gas station, which has like a mini natural market as well, to “get gas”, but I think he just wanted ice cream. Great call by him.

I ate a lot more grains and dairy today than I normally eat. Guess it was just what I have been craving and it feels good to listen to my body instead of just sticking to a certain ‘diet’.
