You guys! I’m so excited for this recipe!! Not only is it tasty, but you know when you make something the first time and it comes out just as you imagined? Well that is what happened here! Usually I test the recipes I post a few times and tweak them depending on the flavors I want, texture, consistency, taste, and what not. Well was just what I wanted on the first try. My boyfriend said I acted like a school girl with how giddy I was about this recipe. I guess that means I just really love good food?

And this coconut curry hummus doesn’t disappoint. I love anything curry so I figured why not put those flavors in one of my favorite dips. When I make curry at home I use coconut milk, so I figured I would use my new favorite yogurt instead. I discovered Kokonut Yogurt a few weeks ago at the farmers market and fell in love! It is an all natural, gluten free, dairy free, vegan, and paleo friendly yogurt made from organic coconuts. Kokonut Yogurt is also free of refined sugars, preservatives, starches, GMOs, and artificial ingredients.

It adds a great creaminess to the hummus while adding a little sweetness and tartness. Since the company is so new, you can only find it in the Austin area right now. Hopefully not for long though! For this recipe you can substitute either canned coconut milk or yogurt of your choice (I would suggest coconut flavored or plain).

Coconut Curry Hummus

I have been eating it with everything from veggies, chips, on salads, and even just by the spoonful. It would go really well on a sandwich or veggie burger too!  Feel free to double the batch to have some all week for easy snacking. I said it serves 8-10, but if you are like me and eat all the hummus, it probably only serves 4-6. This would also be perfect for some football watching! Or pretending to watch football and just eating all the snacks 😉

  • Add all ingredients to a Vitamix, or high powered blender or food processor. Blend until smooth and all ingredients are incorporated, about 2-3 minutes.
  • Top with more yogurt and some red pepper flakes.
  • Enjoy!
