Today is our last day of vacation. Back to the real world. Aren’t vacation blues just the worst. You have the best of time and then you get back to reality and realize just how much you don’t like working. Luckily that doesn’t happen to me too much anymore. It used to be real bad when I was working a corporate 8-5 job, but since I quit and have been working with my passions it isn’t as bad. I mean I’m not saying I would rather work than relax at the beach, but coming back to reality isn’t soul crushing.

Just because I am heading back to Austin and reality doesn’t mean I can’t enjoy the taste of summer a little longer. I love making acai bowls because it reminds me of my trip to Hawaii a few years ago. Talk about the vacation of a lifetime. Hawaii is unreal and I can’t wait to go back. We stumbled upon a little acai shack right down the street from our hotel in Kona. We had no clue what they were, but once we tried them, we were hooked. Those bowls, poke, fresh seafood, and shaved ice are a few reasons alone just to go to Hawaii.

I didn’t learn how to actually make them until I worked at Blenders & Bowls for a little bit last year. The keys are frozen fruit, a high powered blender (love my Vitamix!), and the littlest bit of liquid. That is what makes them so thick and creamy. One of their add-ins was cayenne pepper. At first I was like wtf, but since I love anything spicy I obviously had to try it. And it is so good! It adds a little heat, but isn’t overwhelming. You get the acai, tropical fruit, and then the cayenne comes in at the end. The sweet and spicy combo can’t be beat!

If cayenne isn’t your thing, feel free to leave it out. The flavors are still so good and help me imagine that I am on a tropical vacation sitting on the beach somewhere without a worry in my mind.

ingredients

  • 2 tablespoons lite coconut milk
  • 1 teaspoon lime juice
  • 1/2 frozen banana
  • 1/2 cup frozen mango
  • 1/2 cup frozen pineapple
  • 1 package unsweetened frozen acai
  • 1/2 - 1 teaspoon cayenne pepper (depending on heat preference)
  • optional toppings: kiwi, mango, granola, cacao nib, coconut butter...

instructions

  • All all ingredients in the order listed to a Vitamix or high powered blender or food processor. Blend until smooth, thick, and creamy, about 2-3 minutes. If using a Vitamix, use your tamper to incorporate all ingredients.
  • Place in a bowl and top with toppings of choice. Enjoy!
