One more treat before the holidays are over! I am pretty much all candied out, but anything with salted caramel I can’t resist. And sweet and salty is one of my favorite combos! It has been in the mid 70s here and feels like summer! Well maybe not the kind of summer in Austin, but it is warm enough for ice cream. My dad eats ice cream almost every night, so any night is good for him.

First of all, if you haven’t tried NadaMoo! ice cream you must! It is a local Austin company, but it can be found all over. They are a family owned making  dairy-free ice cream from coconut milk. Their ice cream is USDA organic, non-GMO, vegan, gluten-free, and fair-trade certified. Besides all that goodness, their ice cream is legit! It is the best dairy-free ice cream I have tried and I would even put it up against your favorite dairy ice cream.

My favorite flavor is salted caramel (duh), but some of their other flavors that are a close second are that snickerdoodle duh, mmm…maple pecan, creamy coconut, and chocolate almond chip. You can check out all the flavors here.

My sister and I made these and they couldn’t be easier. All you need is chocolate chips and ice cream. I used Enjoy Life chocolate chips since they are gluten and dairy free, but you can use any kind you like. The key is to make these quickly since the ice cream melts so fast. Also, if you leave them out too long, the ice cream will melt on the inside, but the chocolate should stay hard. I made them mini so you can just pop them in your mouth!

Vegan Salted Caramel Ice Cream Cups

ingredients

  • 1 cup Enjoy Life mini dark chocolate chips
  • 1/4 cup salted caramel NadaMoo! ice cream
  • optional: sea salt for topping

instructions

  • Place 12 mini silicone liners on small cookie sheet (so it fits in the freezer).
  • Melt 1/2 cup of the chocolate chips by using the double broiler method or in the microwave. I did this in 20 second increments, stirring after each time. Be careful not to burn. Place 1 teaspoon of melted chocolate in each silicone cup, making sure the bottom and halfway up the sides are covered. This will ensure a small cup will form when cold. Place in freezer for 10 minutes or until hard.
  • Once hardened, melt the remaining chocolate chips. Add 1 teaspoon ice cream in the middle of the hardened cups. Cover with the remaining melted chocolate and sprinkle with sea salt. Place back in the freezer for an hour or until hard.
  • Leave in the freezer and remove when ready to serve. Try not to let them sit out too long or the ice cream will melt inside!

  1. Ok this is super cool that you used Nada Moo as a local company for this recipe; I’m still not great at using local companies here in Colorado, but I would love to this year! These cups look like the ultimate quick sweet treat.
