Vegan Salted Caramel Ice Cream Cups

Ingredients

  • 1 cup Enjoy Life mini dark chocolate chips
  • 1/4 cup salted caramel NadaMoo! ice cream
  • optional: sea salt for topping

Instructions

  • Place 12 mini silicone liners on small cookie sheet (so it fits in the freezer).
  • Melt 1/2 cup of the chocolate chips by using the double broiler method or in the microwave. I did this in 20 second increments, stirring after each time. Be careful not to burn. Place 1 teaspoon of melted chocolate in each silicone cup, making sure the bottom and halfway up the sides are covered. This will ensure a small cup will form when cold. Place in freezer for 10 minutes or until hard.
  • Once hardened, melt the remaining chocolate chips. Add 1 teaspoon ice cream in the middle of the hardened cups. Cover with the remaining melted chocolate and sprinkle with sea salt. Place back in the freezer for an hour or until hard.
  • Leave in the freezer and remove when ready to serve. Try not to let them sit out too long or the ice cream will melt inside!
