Is this not the definition of summer?! I feel like when people think of summer, they think of grilling out, BBQs, and watermelon. It is so light and refreshing. I never really grew up eating that much watermelon, unless it was at friend’s house or parties, because my mom didn’t buy it that often. I don’t really think she cares for it that much. But Michael loves it and now I am making up for lost time. Does anyone remember people use to say that watermelon was like zero calories because it was all water. Or maybe that was just my friends when I was younger. Or an excuse to just eat a crap ton of it? Yeah probably the latter.

Watermelon Salad with Feta & Mint
I have been wanting to get fresh mint at the farmers market for a little while now to try it out on some recipes. When I saw that JBG had it at the farmer’s market, I knew it was my chance. The flavor seriously blew me away. I don’t think I have ever had fresh mint before and it is amazing. I said to Michael it legit tastes like toothpaste, but I obviously meant it in the best way. Like when you have that fresh minty breath just after you brushed your teeth. You get what I’m saying?

The cucumbers add a nice crunch to the salad. The feta adds a creaminess while also giving the salad a little saltiness too. I used goat feta from the farmers market. One of the best I have tasted and their goat cheese is to die for as well. Sorry if you are not local to the Austin area, but if you are, definitely scoop some up! I also added some lemon juice for a nice hint of acidity. But obviously the main star is the mint!

ingredients

  • 3 cups watermelon, cut in small cubes (420 grams)
  • 2 1/4 cup cucumber, cut in small cubes (300 grams)
  • 1/2 cup crumbled feta - I used block goat feta and crumbled myself (58 grams)
  • 1/4 cup chopped fresh mint (5 grams)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 1/2 teaspoon lemon juice
  • zest from one lemon
  • salt and pepper, to taste

instructions

  • Mix the mint, olive oil, balsamic vinegar, lemon juice, and salt and pepper in a salt bowl. Set aside.
  • Add the cubed watermelon, cubed cucumber, and feta to a large bowl and gently mix. Try not to over mix as some of the juice/water will release from the watermelon and cucumber.
  • Add the dressing and mix all together. Top with lemon zest.
  • Enjoy!
