Ingredients
3cupswatermelon, cut in small cubes (420 grams)
2 1/4cupcucumber, cut in small cubes (300 grams)
1/2cupcrumbled feta - I used block goat feta and crumbled myself (58 grams)
Mix the mint, olive oil, balsamic vinegar, lemon juice, and salt and pepper in a salt bowl. Set aside.
Add the cubed watermelon, cubed cucumber, and feta to a large bowl and gently mix. Try not to over mix as some of the juice/water will release from the watermelon and cucumber.
Add the dressing and mix all together. Top with lemon zest.
