Instructions
Make your buffalo chicken mixture. In a medium bowl, add your shredded chicken, buffalo sauce, greek yogurt, garlic powder, dill, and some salt and pepper. Stir well to combine.
If your tortillas feel a little dry, you can heat them to help them be pliable. Add them to a hot pan or griddle and heat for 15-30 seconds per side.
Make your quesadillas. Heat a griddle or skillet over medium heat and melt the butter. Add about 1/4 of your shredded cheese to half of your tortilla. Top with buffalo chicken mixture and sprinkle with about 1/4 more of your cheese. Fold the other half of the tortilla over the ingredients, pressing it down. Place it on the griddle and cook for 4 minutes, flip, and cook for another 2-3 minutes until both sides are slightly crispy and golden brown. I like putting a small pan over the quesadilla while it cooks to help it get crispy. Repeat with the remaining tortilla, chicken, and cheese.
