Chocolate Peppermint Energy Balls

No-bake chocolate peppermint energy balls with dates, coconut, cocoa powder, collagen, and peppermint extract. Each one has 4 grams of protein and tastes like a decadent treat. They are ready in 15 minutes for a quick and healthy snack or dessert. Gluten-free and dairy-free.

Instructions

  • Break down your dates. Place the dates in a food processor and pulse a few times until broken down into pieces.
  • Make energy balls. Add collagen, cacao, coconut butter, peppermint extract, and sea salt and blend until combined. If the batter is not coming together, add a tablespoon of water and blend until a smooth and sticky ball of "dough" forms.
  • Form into balls. Using a tablespoon as a scoop, form 12 equal-size balls.
  • Roll in shredded coconut. Add shredded coconut to a small bowl and roll each energy ball in it, coating the outside.
  • Let chill. Place in the fridge for 5-10 minutes to harden if desired.
  • Enjoy!
