Coconut Ginger Lime Mocktail

Paleo Coconut Ginger Lime Mocktail! This light and refreshing mocktail is made with sparkling water, coconut milk, lime, and ginger. It has no added sugar or sweeteners, and makes a perfect summer drink for the whole family! Gluten-free, vegan, paleo, and Whole30 friendly too!

Ingredients

  • 2 cans lime sparkling water
  • 1/2 cup full-fat coconut milk (cream from the top)
  • 1/4 cup lime juice
  • 1 inch fresh ginger
  • salt, for the rim
  • optional garnishes: lime wedges. lime sparkling water

Instructions

  • Line 3 glasses with salt. Place coarse sea salt on a small plate. Rub the top of each glass with a lime wedge to get them wet. Dip the rim in the sea salt to coat. You may need to use your hands some.
  • Add all ingredients to a high powdered blender and blend until smooth. Pour into glasses. Top with more sparkling water and garnish with lime wedges.

Notes

this drink does separate some but just needs to be stirred to incorporate again.
