Cucumber Yogurt Salad

Quick and fresh creamy cucumber yogurt salad is an easy spin on tzatziki sauce. Made with cucumbers, greek yogurt, feta, fresh dill, and lemon juice, it makes an easy and delicious side dish perfect for any meal.

Ingredients

  • 5 cups chopped seedless cucumbers (I used the mini ones - 650 grams)
  • 1 cup full-fat plain greek yogurt (8 ounces)
  • 2 tablespoons lemon juice
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (use less for less spice)
  • 1 cup crumbled feta, from a block (4 ounces)
  • 1/2 cup dill, roughly chopped
  • salt and pepper, to taste
  • for topping: olive oil, fresh dill, black pepper…

Instructions

  • Make the dressing. In a large bowl, mix the yogurt, lemon juice, olive oil, red pepper flakes, salt, and pepper until smooth.
  • Make the salad. Add cucumbers, feta, and dill and stir to combine. Adjust according to taste.
  • Enjoy! I like to top with a drizzle of olive oil and dill for serving.
