Ginger Peach Popsicles

Popsicle lovers rejoice with these Ginger Peach Popsicles! An easy summertime treat that is paleo, vegan, and has no added sweetener.

Ingredients

  • 5 medium-sized peaches, roughly chopped (about 2 2/3 cups)
  • 1 1/2 inch fresh ginger, roughly chopped
  • 1/2 cup lite coconut milk
  • 3 tablespoons chopped almonds (optional)

Instructions

  • Place chopped peaches, ginger, and coconut milk in a high powered blender or food processor. Process until smooth and combined.
  • Pour in popsicle molds. Top with chopped almonds if using. Place lid on molds and insert stick (or follow directions per your mold).
  • Freeze for at least 3-4 hours. Enjoy!
