Healthy White Chicken Chili

This hearty and healthy white chicken chili is made in a crockpot for easy preparation. It combines chicken, veggies, beans, corn, green chiles, and cream cheese to give it a creamy consistency. Packed with protein and vegetables, it's perfect for a cozy weeknight dinner!

  • 1 1/2 cups diced onion (180 grams)
  • 1 1/2 pounds chicken thighs
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon coriander
  • 1/2 teaspoon smoked paprika
  • 1 4-ounce can green chiles
  • 2 cups diced poblano pepper (240 grams)
  • 2 15-ounce cans white beans, drained and rinsed
  • 1 15-ounce can sweet corn drained and rinsed
  • 2 cups bone broth or chicken broth
  • 4 ounces cream cheese
  • 2 tablespoons lime juice
  • salt and pepper, to taste
  • for serving - shredded cheese, avocado, sour cream/plain greek yogurt, tortilla chips, lime wedges, cilantro...

Instructions

  • Make chili. To your slow cooker, add onion, chicken, garlic, spices, green chiles, poblano peppers, beans, corn, and a sprinkle of salt and pepper. Pour bone broth over top. The liquid should come to where the ingredients are, and they will just barely be covered. If needed, press the ingredients into the liquid. Cook on low for 6-8 hours or high for 3-4 hours.
  • Thicken chili. Remove chicken thighs and shred with a fork. Add cream cheese to the crockpot and stir until combined and creamy. Add shredded chicken back to the pot along with lime juice and a little salt and pepper. Let warm through, about 2-3 minutes.
  • Enjoy! Serve with your favorite toppings or sides.
