Protein Baked Oatmeal

Protein baked oatmeal made with rolled oats, protein powder, greek yogurt, fruit, and spices makes an easy and customizable healthy baked oatmeal recipe. Made in one bowl and great for breakfast, meal prep, a healthy snack, or pre-workout!

Ingredients

  • 1 medium brown banana (100 grams)
  • 1 cup milk (I used whole)*
  • 1/2 cup greek yogurt (4 ounces - I used full-fat)
  • 1/4 cup peanut butter (64 grams)
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats (200 grams)
  • 1/2 cup vanilla protein powder (50 grams)*
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 cup berries, chopped if needed (100 grams - any kind will work)
  • coconut oil, for greasing

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease an 8×8 baking dish with melted coconut oil and set aside.
  • Mix together your wet ingredients. In a medium-sized mixing bowl, mash your banana until smooth. Add milk, yogurt, peanut butter, honey, and vanilla extract, and whisk until combined.
  • Combine your dry ingredients. Add rolled oats, protein powder, cinnamon, and salt to the bowl and mix well to combine.
  • Bake. Pour the oatmeal mixture into the greased baking pan. Sprinkle with chopped fruit and bake for 30-35 minutes until firm or a toothpick comes out clean. Let cool for 5 minutes and cut into 9 equal-sized bars.
  • Enjoy!

Notes

*I have only tried this recipe with plant-based protein powder (the kind linked above). If wanting to use another kind (whey, collagen...), you might have to adjust the amount and the amount of liquid (milk) as they have different absorbencies.
